Recipe: Roasted Sweet Potatoes

Ingredients

  • sweet potatoes
  • olive oil
  • salt & pepper

Directions

  1. Peel and dice your potatoes.
  2. Spread them on a rimmed baking sheet and coat with olive oil and sprinkle with salt & pepper.
  3. Roast at 425 (on convection if you have it), tossing every 5-10 minutes until they are you desired crispness (I like mine a little burnt!).
