Recipe: Garlic-Balsamic Pork Loin

Ingredients

  • 5 garlic cloves, finely minced or crushed
  • 2 tbsp. balsamic vinegar
  • 2 tsp. coarse salt
  • 1 tsp. freshly ground pepper
  • 2 tbsp olive oil
  • 2 pork tenderloins (about 1¼ lbs. each)

Directions

  1. Combine all ingredients in a gallon zip lock and marinate the pork for as long as you can (again, overnight is best, but even a few hours will work!).
  2. Grill outside (sear each side over high heat and then grill over medium heat for about 20 minutes, rotating every 5 or so) or roast in the oven (heat some oil in an oven-safe pan and sear each side of pork, then transfer to a 400 degree oven and cook for about 20 minutes). Either way you want the internal temp to be about 160 degrees.
  3. Let the pork rest 10-15 minutes before serving. Enjoy!
